Wash, peel, boil and then chop the potatoes. Keep aside in a bowl.

Infuse olive oil with minced garlic and rosemary on the stove. Strain the oil and put 2/3rds of it on the potatoes. Mix well and lay the potatoes out on a baking tray. Bake for 15-20 mins at 200 C until the potatoes turn crisp and red/golden.

Remove from the oven, season with chili flakes, herbs of choice and salt and serve.
